It is from a careful selection of the best Sangiovese clones implanted in our company that the Chianti Colli Senesi Reserve is born. A wine that perfectly associates the pleasantness of Chianti with the power of an important selection of grapes.
Vines
Sangiovese (100%). Vineyards with 5500 vines per hectare, production of 80 quintals of grapes per hectare.
Winemaking
After 5 days of cold prefermentative maceration (5 ° C) and 10-12 days of fermentation at controlled temperature (maximum 25 ° C), the wine remains for at least 60 days in maceration on the skins. The wine thus obtained is then destined for a passage in wood that oscillates from 6 to 12 months (based on the woods used) and subsequent refinement in the bottle for at least 6 months.
Organoleptic Characteristics
The color is a bright ruby red with slight brick reflections due to aging in wood. The aroma is intense and complex with strong sensations of ripe fruit that we also find in the mouth together with a good body accompanied by notes of chocolate and tobacco.
Food
It is an exemplary combination with important red meats and cheeses with medium or long aging.
