The Venetian origin gave us a good background of culture of white wines and this is the result of a deep choice of two vines “not really of Tuscan origins” but which in these particular lands have given surprising results.
Chardonnay (50%), Sauvignon Blanc (50%). Vineyards with 5500 vines per hectare, production of 80 quintals of grapes per hectare.
The grapes undergo a short cold maceration and after pressing they ferment for 10-12 days at low temperature (about 15 ° C). The wine then passes (after a period of storage in steel for about 6 months) into the wooden barrels where it stays for about 3 months. The refinement in the bottle lasts for at least 6 months.
Very intense straw yellow wine, it reveals important notes of vanilla, fresh and ripe fruit and white flowers on the nose. In the mouth it is powerful with a good persistence, savory, ample and very harmonious.
Ideal with very mature cheeses, very tasty fish also stewed and white meats.
Serve at 13-15 ° C
