The "Ciliegio in Fiore" is a very delicate and refined sparkling wine characterized by aroma and freshness. This sparkling wine is produced on the Sienese hills, from vineyards with 5500 vines per hectare and a production of 100 quintals of grapes per hectare. The grapes used are Sangiovese (100%).
The grapes are harvested early to respect their acidity and aroma and, after delicate pressing, they are left to macerate at low temperature for a few hours. The must is separated from the skins with soft pressing and fermented at a controlled temperature with selected aromatic yeasts. Once fermentation is complete, the wine is refined in stainless steel tanks and then subjected to sparkling wine production according to the Charmat method.
"Ciliegio in Fiore" is a light rosé wine tending towards salmon, made crystalline by the fine and persistent perlage. Aromatically fruity with floral hints with light notes of rose petals. Its fine and delicate bouquet is well supported by the right flavor and freshness on the palate. The fine and persistent perlage gives the right taste-olfactory balance and a persuasive sensation of liveliness. This sparkling wine is a versatile wine for any meal. It is also ideal for an aperitif or a toast with friends, with appetizers, first or second courses of sea or lake fish, or simply to accompany panettone and pandoro.
Serve at a temperature of 6° C.
It has an alcohol content of 11.5%.
